Back at it again with another killer recipe for the ol’ protein recipe blog.
This one incorporates all of my favorite ingredients I like to use for a “dessert” dish, and I’m sure you guys will love it just as much as I do! I could eat this thing every day folks, and NEVER get tired of it.
Seriously…it’s that damn good.
For breakfast, for dessert, for a pre-workout—-you name it.
This will fit in perfectly with whatever you’re lookin‘ for.
Alright then guys, I’m gonna keep this short and sweet this week. On to the recipe….

Enter…my Double Dark Chocolate Blueberry Protein Crepes!!
a flour-less, 100% cacao dark chocolate, and whey protein batter….
jam-packed with blueberries, banana, macadamia nuts, cinnamon, amaretto, more melted dark chocolate...
and topped with a healthy dose of peanut butter….
YOW-ZZZAAA!!
Behold….one of my favorite recipes in all its messy glory.
I pretty much threw the kitchen sink into this one folks. All those flavors mashed together into one, ultimate, super-powered crepe combination….
Could you ask for anything more??!
Unlike traditional crepe batter, which calls for all purpose flour, butter, sugar, salt, milk, and eggs—-these crepes’ batter is very simple.
This batter contains:
NO refined all purpose flour, NO butter, NO granulated sugars, and NO dairy milk.
That means lesser saturated fats, lesser carbs, lesser sugars, as the above are substituted with more nutrient-dense ingredients, such as…
Whey protein powder. Nothing boosts a recipe’s protein content more than adding protein powder. These crepes get a big boost with this, without altering its texture on bit.
Cacao powder. We double the chocolate-y goodness of the crepe batter by adding some antioxidant-packed, low carb, high fiber cacao powder. This also helps to eliminate the need to use any flour.
I didn’t even need to add my typical almond flour to the mix.
Almond milk. If you choose the right almond milk, what you get is a lower calorie, low carb, zero sugar, dairy-free, option vs regular cow’s milk. Some almond milks also are packed with nutrients like vitamin E, vitamin D, calcium. When choosing almond milks, I always go with the ones that have no added sugars, low carbs, and lesser ingredients.
And we use eggs.
That’s pretty much it.
Some almond extract and monk fruit sweetener for an extra kick of flavor, and we are good to go.
This is as high protein, low carb a crepe batter you will ever need, and this will produce some tasty, delicious crepes!
Here are the nutritional benefits of the main ingredients inside these Double Dark Chocolate Blueberry Protein Crepes…
Dark chocolate has been shown to contain high amounts of antioxidants, polyphenols, and flavonoids—all of which are believed to help fight cancer, fight free radical damage, and fight disease. Certain research has shown dark chocolate to maybe help improve brain function, boost memory, and enhance focus. Studies have found flavonols in dark chocolate may help improve blood circulation to the heart and may help lower blood pressure.
Blueberries are loaded with antioxidants, vitamins, and other nutrients, and are widely-considered as one of the world’s most nutritious foods. Numerous studies have shown these berries to maybe help fight cancer, fight inflammation, support heart health, boost brain function, and its high fiber content helps promote healthy digestion.
Macadamia nuts are loaded with vitamins, minerals, and other essential nutrients. Studies have shown that phytonutrients and flavonoids inside these nuts help remove toxins and protect the body against disease and cancer. These nuts are also high in manganese, which supports bone health and the nervous system.
Bananas are packed with potassium, a very important nutrient which has been shown to help support the body’s circulatory system, help move oxygen throughout our cells, and helps to lower high blood pressure. Bananas are high in fiber, which helps to keep our digestive system running smoothly and helps to remove toxins.
OK, here’s what you’ll need…

Some quick notes before you get started…
-After pouring the batter onto the hot pan, be sure to make the crepe as thin as possible—flatten it out by making circular motions using the back of a spoon. These won’t roll together as smoothly if you make them too thick.
-Be sure to grease up the pan with some olive oil after each crepe is done for easier flipping.
-Try not to overcook the crepes! They will break apart when you try to fold them in half.
-throw some frozen blueberries into the filling. The heat from the crepes will melt them and get their juices flowing out like in the picture. (An alternate way to get the juices flowing is to just toss the blueberries in a bowl and microwave them for about 30 seconds.)

- 2 whole eggs
- 1 tsp almond extract
- 1/4 cup almond milk
- 2 scoops chocolate whey protein powder
- 1/2 tsp cinnamon
- 2 tsp cacao powder
- 1/2 tsp monk fruit sweetener (or erythritol)
- sliced bananas
- dark chocolate bar (70% cacao or higher)
- macadamia nuts
- blueberries
- cinnamon

- Set pan to low/med heat.
- In bowl, add crepe batter ingredients. Mix thoroughly.
- Measure 1/3 cup of batter and pour onto pan. Quickly, using back of spoon, flatten out batter using circular motions to form a thin, circular shape.
- Let cook for about 30+ seconds or until spatula slides cleanly underneath. Flip over.
- Let cook for about 20 seconds or until spatula slides cleanly underneath. This side should cook quicker.
- Repeat process until all batter is finished. Makes 3 crepes.
- Meanwhile, add dark chocolate squares into a bowl. Melt in the microwave for 30 second intervals, stirring in between, until fully melted.
- Fold crepe in half. Spread melted dark chocolate over crepe. Add fillings (sliced bananas, cinnamon, mac nuts, blueberries). Fold one more time. Repeat process for other crepes.
- Drizzle peanut butter on top. Add blueberries. Enjoy!
