Double Dark Chocolate Blueberry Protein Crepes
a flour-less, 100% cacao dark chocolate, and whey protein batter….jam-packed with blueberries, banana, macadamia nuts, cinnamon, amaretto, more melted dark chocolate…and topped with a healthy dose of peanut butter….perfect for breakfast, dessert, pre or post workout…..protein crepes don’t get much better than this!!

crepe batter:
Instructions
  1. Set pan to low/med heat.
  2. In bowl, add crepe batter ingredients. Mix thoroughly.
  3. Measure 1/3 cup of batter and pour onto pan. Quickly, using back of spoon, flatten out batter using circular motions to form a thin, circular shape.
  4. Let cook for about 30+ seconds or until spatula slides cleanly underneath. Flip over.
  5. Let cook for about 20 seconds or until spatula slides cleanly underneath. This side should cook quicker.
  6. Repeat process until all batter is finished. Makes 3 crepes.
  7. Meanwhile, add dark chocolate squares into a bowl. Melt in the microwave for 30 second intervals, stirring in between, until fully melted.
  8. Fold crepe in half. Spread melted dark chocolate over crepe. Add fillings (sliced bananas, cinnamon, mac nuts, blueberries). Fold one more time. Repeat process for other crepes.
  9. Drizzle peanut butter on top. Add blueberries. Enjoy!
Recipe Notes

-After pouring the batter onto the hot pan, be sure to make the crepe as thin as possible—flatten it out by making circular motions using the back of a spoon.  These won’t roll together as smoothly if you make them too thick.

-Be sure to grease up the pan with some olive oil after each crepe is done for easier flipping.

-Try not to overcook the crepes!  They will break apart when you try to fold them in half.

-throw some frozen blueberries into the filling.  The heat from the crepes will melt them and get their juices flowing out like in the picture.   (An alternate way to get the juices flowing is to just toss the blueberries in a bowl and microwave them for about 30 seconds.)
